Valentine's Day came so fast...
We had anticipated a Grand Love Day Event where Henri would have finally started an amazing adventure out into the world! It didn't happen, but it's quite alright, it has given us all that much more time to get our ducks in a row and do things right. The knits have piled up and will be given out accordingly... shoes, sweaters, hats, and the like.
Instead of a Grand Love Day Event, we had just a regular 'ol Love Day. We woke up to chocolates from our sweetheart and made a yummy banana cake for him in the new rice cooker!
Banana Maple Cake with Blueberries
- two over-ripe bananas -mashed
- two cups of pancake mix
- one egg
- 2 tbs oil
- 3 tbs of maple syrup
- 2 1/3 c. of water
- 2 tsp vanilla
- 1 tsp cinammon
- 1 c. fresh or frozen blueberries
- whipped cream, powdered sugar, fresh fruit, lemon curd, or more maple syrup
This has got to be thee most simple of simple magic recipes we have ever tried!
Mix the first eight ingredients together in the bowl of your rice cooker (mine is a 5.5 cup Zojirushi Neuro Fuzzy) adding the blueberries last by laying them on top of the batter, much like you would when making pancakes. Set the cooker to the regular/sushi setting and press start... you will need to run the cooker tree times total for a complete cooking time of about an hour. Each time your cooker signals the end of the cycle, wait about four minutes and press start again. As you reach the end of the cooking cycle (like the last ten minutes of so), open the lid and check the middle of the cake with a toothpick... if it comes out clean, it is done!
Now, take the pan out and let your cake cool a bit. You will want to flip it out and onto a pretty serving plate, and cover with your favorite topping (I have given you a few suggestions). This recipe is not particularly sweet, so it really does need something on top, I chose syrup and it was soooooo good! The cake has a very moist consistency with a beautiful golden crust on top!

Henri found a little tree stump outside before
the snowstorm hit a couple of weeks ago... We have had a lot of them this season. Anyways, Piet thought it must be cold and swaddled it like a
little baby. The wee thing woke up all safe, happy and warm the next
morning. They have since multiplied, at least they are sweet.Stumpbaby kinda needs a name... suggestions?
So... That is what has been happening here, around the Pumpkinhaus... Oh!!! The chickens started laying!! That has been really, really exciting too!! Henri loves fresh farm eggs for breakfast.
